If you have hearing loss in both ears, usually two hearing aids are better than one.  It helps you hear better in noisy environments, helps you tell what direction sounds are coming from, and allows you to keep the overall volume of the hearing aids at a lower setting.  The trial period gives you the chance to try it out – that way you can decide for yourself if two are better than one.
